Recipes: Jodi's Spiced Rosemary And Thyme Nuts

Jodi, our general manager, also goes by "Granny" around these parts; and Granny loves to cook! She's also kind enough to share her creations with our staff. Here's something we recently snacked on... AND LOVED!

3 cups whole nuts (cashews, pecans, almonds)
2 tbsp olive oil
2 tbsp coarsely chopped fresh rosemary
1 tsp fresh thyme
1 tsp cumin
1/4 tsp cayenne
1 tbsp sugar
1 tsp kosher salt (or celtic salt)
1/2 tsp freshly ground pepper


Heat olive oil until warm and add rosemary and thyme.
Stir until aromatic, 1 minute. 
Remove from heat. 
Add cumin and cayenne.
Pour over nuts and stir to coat. 
Sprinkle with sugar, salt, and pepper. 
Transfer to pan.
Bake 15 minutes at 300 degrees, stirring after 10 minutes. 
Let cool.
Store in airtight container for up to two weeks.
