Recipes: Douglas' Yummeee Olive Oil Granola

We have some great conversations with our High Falls Food Co-Op members and shoppers about food. All of their knowledge and talent is inspiring. That’s why we’ve decided to start sharing these recipes on our very own blog.

Our first submission comes from Douglas Boyce of Accord, NY. Douglas has been a working member with HFFC for nearly four years. Douglas discovered the co-op like many have, by driving by and noticing the cute, green building on the corner. We’re so glad he did. As a working member, active on our communications board, Douglas’ contributions to our co-op and community are greatly appreciated. Also appreciated—his granola recipe.

Yummeee Olive Oil Granola

Prep time: 10-15 minutes

Cook time: 40 minutes

Ingredients:

List 1-

3 cups oats (Douglas uses Bob’s Red Mill gluten free oats)

2.5 cups nuts (pepitas- roasted/salted pumpkin seeds

1 cup desiccated coconut

1/2 cup chia seeds (and/or hemp seeds)

1 tbsp cardamom seeds (removed from pod and crushed)

1/2 tbsp ground ginger (powdered or fresh ground)

List 2-

3/4 cup olive oil

3/4 cup maple syrup

List 3-

1/2 cup golden raisins

1/2 cup goji berries

Directions:

Preheat oven to 350 degrees F

Combine items from list 1

Combine items from list 2

Combine items from list 1 and 2

Thoroughly mix

Spread onto a cookie sheet

Bake for 30 minutes, removing the pan every 10 minutes to stir

Add golden raisins and goji berries

Bake an additional 10 minutes

Tip:

Scoop the granola into glass jars upon removal from the oven to prevent sticking to the pan.

Serve cold or right out of the oven.
