Our Team: SYBILLE SCHUBERT, High Falls Food Co-op Kitchen Manager
This month marks our two year anniversary with our tremendously talented kitchen manager, Sybille Schubert. A brilliant chef, benevolent leader, and wonderful human being, we are aware each day of just how fortunate we are to have her.
As kitchen manager, Sybille keeps our deli case and baked goods counter stocked with delicious prepared foods every day of the week. If you’ve been to the co-op, you’re likely to have loved her scones and muffins (made fresh daily,) sandwiches, or prepared salads. “I love what I do. I usually plan what I’ll be making the night before,” Sybille says, “I kind of dream it up, and then I get excited. Sometimes I can’t wait to get to work in the morning to make the scones!”
A graduate of The Culinary Institute of America, Sybille’s restaurant background coupled with her extensive experience as an organic gardener serve her well at High Falls Food Co-op. Sybille sources all of the food she and her team use from HFFC. “I’ve never worked anywhere with such premium ingredients. Ninety-nine percent of it is organic. That’s pretty special.”
“I use as much local produce as possible,” Sybille says, filling us in on what to look forward to this month. “Corn, peppers, and tomatoes are at the height of their season. I’m excited to incorporate them into recipes for August.” Another thing Sybille is working toward this month is introducing vegan and gluten free scones. After many experiments, she’s gotten her recipe just right, and is ready to feature them more often. “I strive to have something for everyone. Vegan, gluten free, vegetarian… balancing dietary restrictions and nutritional concerns is something I’m always conscious of.” Sybille continues, “I’m proud to work here. I’m proud to be part of the 40 year legacy.”
The High Falls Food Co-op kitchen welcomes special orders, requests, and feedback. “I love the fact that the co-op is a community hub. It’s been great getting to know the members, shoppers, staff, and local farmers. People can feel free to come on down to the kitchen and chat!”
When she’s not feeding the masses, Sybille enjoys spending time in her organic garden and exploring the mountains of Accord with her sweetie, Steve, and their beloved dog, Henry.
