Recipes: Cari's Irish Colcannon

Cari, one of our talented co-op cook, shares with us one of her best loved recipes for a traditional Irish Colcannon. This dish is best enjoyed in the company of family and friends. 


5 potatoes
6 tbsp butter
2 leeks sliced thin
2 cloves garlic
2 cups chopped green or Savoy
1 1/2 cup milk
1/2 cup heavy cream
One thinly sliced scallion
Salt and pepper

Cover potatoes with water, bring to a boil.
Reduce heat and simmer until fork tender.
Drain, cool and peel.
Melt 4 tbsp butter and add leeks.
Cook for about 8 minutes, add garlic, and half of Chopped cabbage.
Cook until wilted.
Add milk and cream and simmer.
Add potatoes and remaining cabbage.
Coarsely mash, add remaining butter and season with salt, pepper and chopped scallions. 

An Irish vegetarian treat perfect for St. Patrick's Day.

Can be adapted to vegan diets by substituting almond milk and vegan butter for dairy counterparts.
