Recipes: Jodi's Spinach Squares

Our General Manager, Jodi, has been making these crowd pleasing spinach squares for her family gatherings for many years. Be it a Chanukah party or New Year's Eve bash, spinach square's are Jodi's go to hors d'oeuvre. 

2 packages frozen chopped spinach (10 oz each)
1/4 cup butter
5 eggs
1 cup milk
1 cup flour
1 tsp salt
1 tbsp baking powder
1 tbsp minced onion
1 lb grated sharp cheddar

Defrost spinach.
Melt butter in 9"x13" pan.
Beat eggs and mix in milk, flour, salt, and baking powder.
Mix well. 
Stir in onion, grated cheese, and spinach. 
Pour into buttered pan. 
Bake at 350 degrees F for 45 minutes.
Chill and cut into squares. 
Serve warm- reheated in oven.
Freezes well!
Makes 60 squares.
