Catsmo Artisan Smokehouse of Wallkill, NY, is an artisanal smokehouse in the heart of the Hudson Valley. This family run and operated business always uses fresh salmon. For all the smoked salmon products that are made to order. The Co-op carries their organic, vodka dill, bourbon pepper, and scottish smoked salmon.  All the salmon is farmed raised in the farthest remotest regions of the icy northern Atlantic. Also their smoked rainbow trout is sustainably raised at Clear Springs in Idaho. They have been at the forefront of environmental stewardship and continue to be a leader in sustainable production and processing. They use pure water from the Snake River Canyon underground aquifer which exceeds EPA quality standards. Clear Springs is a 100% utilization farm, all trout viscera and scraps are turned into liquid fish fertilizer for organic farms. All Catsmo products are Kosher certified and SQF level 2 certified. SQF certifies and assures buyers and customers that food has been produced, processed, and handled accordingly to the highest standards. SQF is recognized by retailers and food service providers around the world who require a rigorous and credible food safety management system. Meeting customer demands and their clean food standards make the Co-op happy to carry Catsmo products. Fresh never frozen salmon made just a few towns away, the Hudson Valley is lucky to have Catsmo’s Smokehouse!

High Falls Food Co-op has a deep love and appreciation for the natural gifts given to us by the Earth, especially the gifts you can eat– like olives! In their raw form olives can be a delicious snacks or a flavor and texture enhancer for meals. We carry a wide variety of olives from all over the world. Divina, La Medina, and Frutto d’Italia provide a beautiful variety to us on a weekly basis. Did you know there are laws regulating & banning the spraying of pesticides on olive trees all over the world? We take special care to provide our members and shoppers with olives from farms which follow these laws and sustainable practices. Below is a guide to the types and providers of the quality olives available at High Falls Food Co-op in our fresh meat and cheese case.

Divina

Divina olives represent the core values of the Co-op; authentic taste, traceable, & superb quality. They harvest and cure their olives according to centuries old methods. They have an organic line produced with out pesticides, colorings, or additives. They also have an all-natural line which is 100% non-gmo an free of pesticides.

Greek Mix (Greece)- a beautiful blend of Mt. Athos Green, Mt. Pelion black and blond, Kalamata Gordel, and Nafplian. Seasoned with wild herbs this blend creates a delightful medley of flavors.

Kalamata (Greece)- delightfully fruity, full-bodied olive grown in Greece Peloponnese Peninsula. Essential for Greek salads and perfect for olive bread, pizzas, and pasta sauces.

Castelvetrano (Italy)- named after a town in the Northwestern coast of Sicily, naturally bright apple green with no additives. This meaty, buttery, juicy olive has a mild and sweet flavor with undertones of artichoke.

Tapenade- this wonderful chopped Tapenade is made with Halkidiki Green olives, Kalamata’s, sweet Florina peppers, zesty capers, garlic, sunflower oil, Red wine vinegar, grape must, sea salt, & citric acid. YUM

La Medina

La Medina olives imported from all over the whole are an all-natural healthy distributor. We are very grateful for their curing processes and clean practices.

Ascolana (Peru)- the authentic flavors of Peruvian cuisine are captured in this fiery olive marinade made with traditional Chile peppers  (Limo, Rococo Aji and paprika) the mild, buttery green olive provides balance to the blend of fruity and spicy peppers.

Beldi (Morocco)- earthy rich olive will warm your palette with their bold, fruity filled flavor, superb alongside roasted meats and in coucous.

Frutto d’Italia

Frutto d’Italia happily provides us with our Italian olives. Italian olive farmers follow admirable agricultural practices. Country-wide they do not spray their olives with pesticides.

Antipasto (Italy)- dry and flavorful mix of olives with garlic and peppers, great for any bbq or before dinner.

Gaeta (Italy)- earthy & fruity, great for salads and snacking

Henry and Lisa’s Natural Seafood (Dover, NH)

Henry and Lisa’s wild caught seafood is all-natural — the way nature intended. There are no preservatives, dyes, growth hormones, antibiotics, pesticides, moisture retainers, carbon monoxide, tasteless smoke, etc. Henry and Lisa’s procurement strategy is to be as vertically integrated as possible. They meet with and work directly with fishers and their seaside communities. This assures they get the top of the catch, guarantees the harvest method and whenever possible returns a premium to the fishers. Their goal is to support the existing infrastructure in the industry and partner with processors who share our commitment to quality and sustainability.

Natural Sea

Natural Sea is committed to sustainable fishing. They offer wild caught  seafood products that, individually, meet the guidelines established by various independent agencies including the Monterey Bay Aquarium, Marine Stewardship Council, Blue Ocean Institute, and Earth Island Institute.

All of their tuna is Non-GMO Project Verified. Their products contain no MSG or preservatives.

Smoked Fish

Catsmo Artisan Smokehouse (Wallkill, NY) 

All fish arrives fresh–never frozen—to Catsmo Artisan Smokehouse just hours after being pulled from the icy cold waters in which they were raised. Each fish is inspected both by sight and by smell. Catsmo is committed to upholding high standards and proven artisanal techniques to continue to produce the best smoked salmon available in NY. While their products are all-natural, HFFC does carry their organic smoked salmon as well, which is from some of the most remote salmon farm sites in the world, situated within the most pristine waters along magnificent and rugged coastline, windswept and storm tossed for much of the year.. These salmon are raised totally organically, no chemicals, antibiotics, or medications and fed with only organic food.

Hudson Valley Fresh Milk

Hudson Valley Fresh believes that a varied diet makes for happier cows and better tasting milk. HVF cows are fed a combination of alfalfa, oats, barley, soybeans, corn silage and lots and lots of hay on their 10 family owned dairy farms. HVF is proud to have never used artificial hormones, and vows that they never will. Hudson Valley Fresh processes all of their milk at Boice Dairy in Kingston, NY. Their milk is the only milk processed there, so they ensure that it does not co-mingle with milk from other farms. HVF milk is pasteurized for only 20 seconds at 166 degrees. HVF milk is certified Kosher. It typically arrives on store shelves within 36 hours after leaving the farm.

Maple Hill Creamery

Maple Hill Creamery Milk is 100% grass fed and organic. With over 100 family owned farms in New York State, MHC is now one of the fastest-growing dairy brands in the natural channel. Their cows spend most of their time outside grazing on grass in pastures as weather permits. Farmers store hay (dried grass) for winter feed. Calves are never fed supplemental grain, soy, or corn, but enjoy a diet of mother’s milk (direct from their mother or from the milktank, depending on the farm) until they start to graze for themselves.

Natural By Nature

Natural By Nature milk is organic; cows are grass fed and pastured as weather permits. Their diet also includes some grain and hay, especially during the winter time. NBN milk comes is both glass and paper containers. NBN milk in glass is not homogenized, products in paper are homogenized. NBN milk is pasteurized using the High Temperature Short Time (HTST) process where milk is heated to 165 degrees for about 20 seconds. NBN’s farmers do not use pesticides or herbicides on their farms. Cows are not given antibiotics or synthetic hormones. NBN family owned arms are located in Pennsylvania and Maryland.

Organic Valley

A co-operative of family farmers since 1988, Organic Valley sets a high standard for their farming practices— standards that served as the framework for the USDA’s organic rules. OV animals live in clean, comfortable, low-stress housing. They also spend plenty of time outdoors grazing in pastures. Organic Valley never uses antibiotics, instead opting for holistic organic remedies. OV offsets the electricity they consume through renewable energy production. They also use biodiesel made from sunflowers that they grow on their own farms and use in their trucks and tractors.

Ronnybrook Farm Dairy

Ronnybrook Farm milk of Ancramdale, NY is pasteurized but not homogenized, so the cream floats to the top. Ronnybrook avoids the use of antibiotics as well as the use of chemical fertilizers and pesticides. Cows have daily access to pasture and outdoor exercise. When housed, cows stay in comfort stalls with individual mattresses. Ronnybrook milk is tested by state certified and licensed staff for antibiotics and other impurities to insure that all products and as wholesome and healthy as possible. Ronnybrook milk comes in glass jars which can be returned to the co-op for a bottle deposit refund.
